CHEF DE PARTIE - Sous Chef 

 

Start date: as soon as possible

seasonal contract till October 2019

 

Supporting the head chef in ensuring the quality of the food offered in compliance with Thomas Cook company standards, budget and health code regulations. In absence of the head chef responsible for all food offers provided in the hotel and leadership of the entire kitchen & stewarding department.

 

RESPONSIBILITIES

Support of the Head Chef in: 

  • Planning & supervision of purchasing, production & labor costs
  • Plan & realise purchasing of food & supplies according to the company´s purchasing specifications & monitor inventory ensures, budgeted costs are being met
  • Calculation of all food offers, sales prices and costs of sale
  • Storage management of food and supplies (keep breakage, theft and food waste at a minimum)
  • Ensure compliance with Hazard Analysis and Critical Control Points and local health code regulations in all kitchen & stewarding areas (ensure cleaning processes & documentation)
  • Leading the stewarding department
  • Supporting the head chef concerning the following tasks

  • Responsible for the production and presentation of all food offers
  • Menu management (development of food programs & food offers according to budget & guest structure)
  • Responsibility for the quality of the food presentation including all buffet services, front cooking, the specialty restaurant, snack offers
  • Support kitchen departments (front cooking& preparation) actively in case of need
  • Supervision of all standardisation (recipes, techniques, documentation, monitoring)

 

REQUIREMENTS

  • Certificate of culinary school
  • Language skills in both Local and English. 
  • Ability to spot & resolve problems efficiently
  • Capable of delegating & following up on multiple tasks
  • First experience in menu management, cost calculation, cost control & staff planning
  • Working knowledge of computer software programs (MS office, POS, restaurant management software)
  • Keep up with cooking trends & best practices
