We are currently looking for a Chief Steward to join us at Casa Cook Ibiza!

 

The key objectives in that role are: Organization & leadership of the entire stewarding department in compliance with company standards, H&S regulations and budget. Responsible for the cleanliness of all gastronomic back of house areas & food service areas

 

Start date: 1st July 2019

seasonal contract till October 2019


RESPONSIBILITIES:

  • cost control & general management; Planning & supervision of
     
  1. purchasing of all cleaning materials / cleaning agents, supplies & labor costs
  2. plan & realize purchasing of cleaning materials & supplies according to company´s purchasing specifications & monitor inventory
  3. storage management of cleaning materials and supplies
  4. as well as FF&E and OS&E (keep breakage, theft and waste at a minimum)
     
  • health & safety
  1. ensure compliance with HACCP and local health code regulations in all kitchen & stewarding areas (ensure cleaning processes & documentation)
  2. supervision of proper conditions of all kitchen FF&E & OS&E (maintenance, cleaning, proper use)
  3. correct handling of machinery & materials, lowest possible breakage, correct use of cleaning products) in alignment with the head chef
  4. garbage management (proper handling, separation)
     
  • operations/ supporting the head chef concerning the following tasks
  1. assistance with incoming goods (storing food & supplies according to H&S regulations)
  2. responsibility for the cleanliness in all kitchen / food service areas as well as the receiving, storage & garbage areas
  3. staff & communication

 

  • supervision & leadership of all stewarding personell
  1. training & development of all stewarding staff (provide trainings on the job, train new staff,..)
  2. support head chef in shift & staff planning for the stewarding areas (according to occupancy and budgeted labor cost goals)
  3. provide daily team briefings
  4. participate kitchen meetings & briefings
  5. close cooperation with other hotel departments / heads of departments


REQUIREMENTS:

  • proven experience in a similar position
  • good Spanish language skills and basic in English
  • experienced in working in hotels with >300 covers/ day
  • ability to spot & resolve problems efficiently
  • capable of delegating & following up on multiple tasks
  • leadership skills
  • ability to work in a team
  • strong knowledge of local sanitation rules, HACCP and H&S management
