We are currently looking for several Demi Chef de partie to join us at Casa Cook Ibiza!

 

The key objectives in that role are: Production of food products in compliance with Thomas Cook company standards and health code regulations. Leadership & organization of the respective partie in absence of the chef de partie.

 

Start date: as soon as possible

seasonal contract till October 2019


RESPONSIBILITIES:

  • cost control & general management
  • Support the kitchen management in securing quality & cost targets by
  1. informing chef de partie about necessary purchasing concerning food & non food items, monitor inventory for the own partie
  2. proper treatment of food and supplies (keep breakage, other loss & food waste at a minimum, reduce overproduction to a minimum)
  • health & safety
  1. compliance with HACCP and local health code regulations in own partie (execute cleaning processes & documentation)
  2. taking care of proper conditions of all kitchen FF&E in the own working area (maintenance, cleaning, proper use)
  • product quality
  1. responsible for the production and presentation of food offers
  2. make suggestions for food offers according to budget & guest structure
  3. taking care of a proper quality of the food presentation provided by the own partie
  4. food preparation, mise en place, front cooking
  5. compliance with SOPs (recipes, techniques, documentation, monitoring)
  • staff & communication
  1. supervision of staff working in the own partie in absence of chef de partie
  2. training for new employees, apprentices & trainees in own partie
  3. provide daily team briefing in chef de partie´s absence
  4. participate in team meetings of the kitchen crew
  5. close cooperation with other hotel departments & colleagues


REQUIREMENTS:

  • certificate of culinary school
  • proven experience in a comparable position
  • first international experience in the hotel industry, especially international hotel chains required
  • language skills:
  • basic knowlegde in Spanish & English
  • first experience in buffet services
  • will to take over responsibilities
  • ability to work in a team
  • knowledge of local sanitation rules, HACCP and H&S management
  • ability to work within a system and ensure the maintenance of standards
